For pickerel:

1 Cup Celimix Brand Batter Coating Mix (sold in healthfood stores), salt & pepper, 2 egg whites, 1/2 cup cold milk or water or a combination of both. Dip fillets in the batter, deep fry or pan fry.

Delicious, and dont'forget some fresh lemon wedges and a nice salad.
