Preparation of Poor-Man’s Shrimp
1 Northern Pike fillet, Garlic salt, Favorite cocktail sauce, Bowl of ice water
Cut pike fillets into one-inch squares and place fillets into mesh strainer. Put 1 inch of water in bottom of large pot. Sprinkle in garlic salt. Bring to a boil. Place strainer in pot, and cover. Steam for 30 seconds. Remove cover and turn pike with fork. Return to steam for another 30 secs. Prepare pan with ice water. After steaming pike, immediately immerse into ice water. Leave for one minute and remove. Chill in refrigerator for 20 minutes. Serve with toothpicks and your favorite cocktail sauce.
Our group doesn't fish for pike so consequently we won't have a chance to try out this recipe. Don Meisener (sp) of Streamside (PBS network) tried this in northern Quebec and couldn't believe how well it tasted. Who is up to the challenge?
