Old Canadian fisherman gave us this simple beer batter recipe - like T-Bone's but a smidge easier:
First, pour some crappy American beer into a shallow bowl hours before you need to make the batter. Hours later, take a cup of flour, a teaspoon of "magic powder" (baking powder to most of us south of the border), and one egg, mixing it all together with some of that flat, stale, warm beer until you get a batter. (The hardest part is distinguishing the beer you left out from the American brew you pulled out of the fridge.) Add salt/pepper to taste, and fry away. Wash down with some "50".
For trout, try the old hickory board recipe. Maybe you've heard of it. Take a green hickory board, place trout on top, bake at 350 for one hour, remove from oven, throw trout away and eat board.
Alas, I'm not much of a trout/salmon fan... enjoy!
